Need help with selecting motherboard/CPU combo to build epic gaming PC

I'm building a new "show quality" epic gaming/video editing system. Mainly (75%ish) for gaming. It will be fully water cooled. I have a very large budge so I'm going for an extremely, unnecessarily, over compensating system. I'm looking to get 2x 780tis and as of right now am looking at the following 2 set ups to start with:

Asus Rampage IV Black with the i7 4930k

Asus Maximus VII Formula with the i7 4790k

So I ask, if price wasn't that big of an issue what would you pick and why? Or do you have another setup in mind and why?
Case wise I'm looking at the 750d or 900d. That depends on what's left in my budget after the main components are bought.
Also, any input or ideas I'm allllllllllll ears!

I would wait a bit until the new Haswell-E is fully supported because then you will get great performance if you go with the i7 5820k, the i7 5930k or the 5960X. I would go with the 5930k since 8 cores isn't needed yet but in the future you can upgrade to the 8 Core extreme edition

Is x99 the most current top of the line chipset? Guess in my original post I should have mentioned the last build I did was 2 years ago so I am a bit out of date

X99 is the highest grade chipset you can get from intel at the moment.
