The Sapphire R9 280 was on offer a while back (a month ago) and it cost £140, I was going to get the R9 270x which was £120 but I went for the 280 cause a lot of people said that it was good for only £20 extra.:D
Is the 280 by sapphire's heat sink good for overclocking and is the 280 kinda future proof? I could get the same card from a different company (for a different heat sink) but the price increase is around £20-40 more and I'm not sure if it's worth it. There is really no sense in paying £40 more for a 280 when the 280x can be bought for around the same money.
I want to play next-gen games (The Witcher 3, GTA V, etc) and am planning on using it on a dual monitor set-up.
Other cards I have seen are; 285 which is closer to the 280x price don't really know about the performance and Asus GTX 760 DirectCU II which is around £170.

To summaries: Sapphire R9 280 overclocking ability and good for up-coming games on max or very high at 1080p? Is there another card in the same price bracket (£140 or near it) that's better than the 280?

Trust me there is no such thing as overkill even for 1080p, but the r9 280 will be able to run future games at medium-high setting at acceptable fps. However if you can get the 280x (which is the best card from the ones you listed) you might just be able to push high on future games.

Alright, I'll just stick with the R9 280 for now since the 280X is £60 more which is more than what I want to spend currently, Can the Shappire R9 280 Dual-X overclock well compared to the XFX DD, Asus Direct CU II, MSI Twin Frozr, etc. or is it about the same?

All the ones you mentioned are respectable variants and overclock more or less the same as each other. Some may be overclocked out of the box more than others, but it all comes down to which you like better. (since performance differences are minimal)

The way AMD line up their cards currently are :
R9 270X, R9 280, R9 285, R9 280X, R9 290
The R9 285 does have the currently the latest GCN architecture so Free Sync, True Audio and full mantle support. However, you probably don't need this.
The R9 280 should be fine at ultra 1080p. You can overclock it to gain more performance as well.
Are you running dual monitor as in gaming on both monitor or only one and the other is for a browser ?

The Sapphire R9 280 Dual-X OC http://www.amazon.co.uk/gp/product/B00IRTXPBM is an excellent card for the price and a great choice for 1080p gaming. It should easily be able to play most games at ultra settings with at least 40 fps.
