I've read some topics here for the same subject but I just couldn't reply to them as the threads are already closed. So here's my response and resolution....hope it helps you guys!

"Happened to one of my Field IT guys. Told me the same thing and mentioned that he had rebooted the server twice already as required by the installation steps he was doing at the time. I was speaking to him over the phone while I was Googling the issue. I suddenly remembered one thing and had him do which I've never seen in the forums/threads - REBOOT THE SERVER AND GO TO THE BIOS. Check if the NICs are all there and I'm expecting that they SHOULD. So he did reboot, went to the BIOS and he did SEE all the NICs in there. Told him to exit out of the BIOS and resume the normal reboot. Then BOOM! Not sure if it will disappear again in the near future but if it works, it works! And I'll take that!"

So - checking the BIOS - or doing another server reboot - or both - might not be the real resolution but it did help and resolve our problem. Also the good thing about it, is my Field IT guy didn't have to spend hours and hours or troubleshooting and re-imaging the server.
