Hey guys, I am wondering,
Will x3 GTX 970s or x2 GTX 980s be enough to be "future proof for like 3-5 years"

and I am wondering if there are other alternatives for monitors since I was thinking about getting
the ASUS ROG Swift? any advice you can give me will help me out a lot thanks :)

Since 2-way SLI scales nicely with these cards, but adding the 3`rd and even 4`th does not add so much value, I would recommend that you do with the 2-way 980.

IIRC, regarding these cards, the 2`nd card adds about 80-90% performance, the 3`rd about 35%, and the 4`th about 25%.
Hence, the 2-way SLI is providing really nice performance, but the 3rd and 4th don`t give you enough horsepower to consider the purchase.

I would go for 2x 980 then. 3 way SLI can scale well, but often it doesn't. 2 way scaling is generally supported a lot more.
