970 SLI vs Single 980 for 1440p IPS or 1080p with gsync help

I'm about my build my rig and I'd like some advice on graphics card and Monitor

I was originally going with a single evga 980, but debating doing two 970s. How important is g-sync to gaming? I'd like to game at 1440p, but I cant afford the Asus ROC 1440p with G-sync. I was looking at the PB278Q but I read through toms best gaming 2015 list and the AOC G2460PQU seems pretty nice, but its 1080p.. then throw in 4k and UG my brain hurts.

I play FFXIV the most, then other random games, XIV is getting a texture upgrade soon and im looking forward to Witcher 3 if that helps with what I play.

Thoughts and advice would be really helpful.
 
(2) 970's blow a single 980 out of the water. I am in a similar boat. I am running a 60Hz 1080P display and just waiting on the display I want. 1440P, G-sync, IPS(if possible). the SWIFT at $800 just seems ridiculous to me right now. I am waiting. i do want g-sync because there are games out there at even at 60Hz will stress a pair of 970s. I figure once there is more competition in the G-sync display arena the prices will start to come down.

There is no game out there that isn't unoptimized trash (AC Unity, Watch Dogs) that will not run @ 1080p max with 2 970s under 60fps. Not even Crysis 3
