Budget $3k-$4k | Time for my PC / Server/ Virtual Environment Upgrade - Input appreciated

I haven't touched my old rig in a few years and after taking it out of storage and cleaning the dust buildup I am thinking of just building a brand new rig.

I would be using this for personal computing / gaming / server / Virtual Environment(eSXI or Hyper-V*)

I am currently working on getting MCSE Certification which is why I would using the Virtual Environment making me more inclined to be using Hyper-V but I prefer eSXI. Thoughts on either?

Items I already own:
2 x 256GB Samsung 840 Pro
2 x 128GB Samsung 840 Pro (1 x 2012 Server Data Center - 1 x Server 2012 Standard)
1 x 8GB M.2 SSD (eSXI)
1 x 256GB mSATA

For the new rig I am considering the following:
ASUS x99 DELUXE
i7 - 5820K (6 cores)
H110 Corsair Cooler
32GB DDR4 Patriot Viper Extreme (4x8GB Kit)
900D Corsair Case

Not sure about:
2 x GTX970 (Haven't fully researched RemoteFX or GPU Pass-Through on eSXI)
1500w Enermax MaxRevo

I am really hoping to run all this on this single rig - if not I can re-use the guts from my previous rig.

I have no experience with servers, but:

- gaming PC and server on one system? I don't think that is a good idea (OS issues mainly)
- why have two editions of the same OS? Just settle for one.
- isn't ECC RAM preferred for server builds?

Someone feel free to prove me wrong.
