So i have an idea but i want to get some 2nd options on it.

What i want to is get 2 SSD 250GB run them in Raid 0
Then i want to have WD Black 1TB HDD drive

put my OS and any games on my my SSD
Then i was going to change the location of my Desktop and other folders to the HDD.

1st question is am i gonna have any issues with that config
2nd question is there a setup that you might think work better

my goal is to keep as much crap off my SSD's

Sounds like you stumbled on the way i setup comps since 97.
Other than the risks of raid 0 theres no real issues with the idea. You may want to consider a backup drive for your OS due to that double risk, but other than that its how every comp ever should have been built.

Programs with OS, personal files, desktop etc on a seperate disk.

As far as i know all current systems are choked at the disk transfer speed. Save for going to a PCIe or M.2 solution raid0 Sounds like the only way to get ahead.

But to be honest i havent looked at actual results myself. The way my systems look i may well skip regular SSD entirely and go with PCIe SSD along with SSHD for storage. PCIe will be a little while but no point not going SSHD next time i get a disk.
