My current laptop is an HP G62 with an AMD Athlon II P340 Dual-Core Processor (2.20 GHz).
I wanted to upgrade to a quad-core CPU however I had a few questions.

1) Will there be a benefit in increasing my number of cores, particularly with gaming (CS:GO + F:NV), how beneficial would the upgrade be?

2) What processors are compatible with an HPG62?

3) What processor would you guys recommend for me to upgrade to, if it is worth doing so?

I would not recommend you to upgrade the CPU, because the chipset of the motherboard is mostly likely to come with factory construction to work with the installed CPU, so you could experience incompatiblity by upgrading the CPU.
Even if you do not experience this problem, the new CPU could overheat your laptop because the cooler is designed to cool the original CPU, not a stronger one.
For last, you won't gain much for gaming by upgrading the CPU. The performance difference would come from the video graphics card, but is it in-board.

The 28 april answer is very stupid, there are an official supported processor list.

The best processor you can upgrade is an 4 cores one,

processor cores threads speed caché power socket

Phenom II N930 4 4 2 GHz 2MB 35 Socket S1 (S1g4)
Phenom II N950 4 4 2.1 GHz 2MB 35 Socket S1 (S1g4)
Phenom II N970 4 4 2.2 GHz 2MB 35 Socket S1 (S1g4)
Phenom II P920 4 4 1.6 GHz 2MB 25 Socket S1 (S1g4)
Phenom II P940 4 4 1.7 GHz 2MB 25 Socket S1 (S1g4)
Phenom II P960 4 4 1.8 GHz 2MB 25 Socket S1 (S1g4)

These are the supported ones.
