Yes. They will work independently of each other as long as your video card supports 3 screens.

And If I want to run a game at 60hz, spreading across all 3 monitors, will there be any problems?

No. The game will run fine. You will probably have to cap certain games to 60 frames in the settings (like shadow of mordor).
