I just bought the 980ti yesterday and I've been told this could easily play 4k/2k games on ultra is this true? If so what monitors do you recommend me buying to replace or add to my current Asus VG248QE'S? The monitors must be 1ms response times. Thanks! :) any other advice/suggestions is widely accepted :)

Solution
I meant replace current 2 monitors with 4K or get another one of your monitor.

And I can care less about what GPU you have; 1ms is more than enough to give you remedy for what G-Sync is for. It's 60Hz panel, it won't screen tear.

I'm used to having 2 monitors so not sure if I'd need to be surrounded by them. I was thinking of doing a three monitor setup where I'd buy a 4k monitor put it in the middle.. then have my current two monitors on the sides.

One issue with 4k monitors is the small text size on they typical 28"4k monitor.
If you have the desk space, consider a center 40" 4k monitor like the Philips BDM4065.
Use the current monitors as side monitors for static stuff like email and performance monitors.

If you do 4K and 3840x1080 (2 1080P monitors side by side), you won't get >60 FPS on ultra.
Rather you replace your current 2 monitors with Acer XG270HU, or get another Asus VG248QE.

Do you mean replace my current 2 monitors with the Acer XG270HU meaning that id end up with 3, 4k monitors? Or that id replace my two current monitors with 1, 4k monitor?

I also have a 980ti so wouldnt i want somehting with gsync not freesync?
