Intel® Core™ i5-540M Processor Vs Intel® Core™2 Duo Processor P8700

What are the main issues with regards i5 etc processors compared to dual or core duo processors?

The 2 you mention are both at 2.53GHz the i5 has the following the Core 2 does not:
Hyperthreading
Turbo boost to 3.066GHz
Is based on newer and better design
32nm instead of 45nm

The i5 540M is better but Sandy bridge (i5-2xxxM) is now out and is better than both.
