No difference. If you have a tinfoil hat, Enterprise allows you to control the M$ snooping a bit more...

Pro is what most should aim for, Enterprise does allow you more control how much info is fed back to microsoft but updates are slower in getting released.

...in much the same way that Debian is (much) slower than Ubuntu for updates (which is based from Debian) - this is for stability reasons. Enterprise is more stable, but from a gaming perspective, there should be no difference - metal chapeau's aside...

Either, but make sure it's 64-bit so you can install plenty of RAM.
