low power pfsense

Will this build be enough to run pfsense with 5 interfaces and connected to a vpn in canada?

Yes that will work fine, you could add a decent sized HDD for running squid and I would up the ram. Why did you need 5 interfaces?

I will grab one more 2gb stick of ram and I have a spare hdd. I use 5 interfaces for WAN, LAN, Guest Network, BTC Mining Network, DMZ Network

No problem, doing per interface will work, I'd be tempted to get a managed switch instead and have WAN, DMZ and a vlan trunk. (Router on a stick)!
