Hi,

I currently have the following:

2 of Dell P2415Q (4k monitors) and an Apple Cinema Display (27" 1440p) hooked up to GTX 1070.
I will be replacing Apple Display with Dell S2716DG.
P2415Qs will be on the sides and Dell S2716DG will be in the middle, mainly for gaming.
While gaming, I do not have anything up and running on the other 2 screens.
Will my GTX 1070 handle the load at 1440p 144hz when my new S2716DG arrives?
Should I replace them?
My main game is DOTA 2. What is the best way to check if the GPU is properly working at its maximum?

Other things to consider:
CPU: 3820k LGA 2011
CPU Cooling: Corsair 110 water cooling
PSU: Corsair TX750
RAM: Corsair 32GB (4x8GB)

Solution
The GTX 1070 is perfect for 1440P. Plus you are playing a old game so you'll be getting over 144fps on max settings.

But i don't get your question about replacing your other monitors. If you aren't playing in surround across all 3, it shouldn't be a problem.

Thanks for your answer.
I'm only replacing one monitor, which is the Apple Display.
DOTA2 is an old game but I'm not sure how demanding the game is in terms of the hardware...
