GTX 1070 Can Handle 1440 & 1080P monitors, but not 1080x2?

About two months ago I upgraded my GPU to a Nvidia GTX 1070. I'm quickly realizing that other elements of my system need upgrading, but something has surprised me.
Before the upgrade, I was running dual monitors on my Sapphire R9 270x. The monitors were a 60 HZ old 1440x900 monitor, and a entry level 60hz 1080p monitor. It ran these two with no problem, and I could stream video on the 1440 and game on the 1080 simultaneously with no lag. After the upgrade, I continued to run this setup with no problems. A week or two ago, however, I got a new Asus Predator 1080 144hz monitor as a gift. Since then, I've moved to a dual monitor setup with that as my primary and the old 1080p as my secondary. However, I've ran into problems; my system can't handle streaming on one monitor and playing on the other. Even relatively low end games are giving it some problems.

Now, in addition to this, I'm finding that my system needs additional upgrades. I'm getting frequent memory problems with 2 healthy sticks of 4 gb DDR3 ram, (8 GB in total), and the ol' reliable 3570k (no OC) may finally be at its end :(. But surely this monitor jump shouldn't be resulting in such dramatic problems, right?
