Turn PS3 into a Server

Heyo,
is it possible to turn my ps3 into a server to connect to my vpn for example? (and ofc do more with it if it is possible)
Maybe I can do this by removing the hard disk of the ps3, connecting it to my pc, installing an os onto it and then put it back into the ps3? or doesn't that work because of the hardware the ps3 got?

Absolutely.

This is called an OFW or CFW (custom firmware).
Custom Firmware is basically like a new Operating System.
It is pretty involved, and i'm not sure what the real purpose would be, or what benefit a PS3 would have over any other device, but certainly possible.

Can I only install these CFW/OFWs or also another OS.

The purpose is that I don't have to buy a new deveice when I have the PS3 laying around here

You can't install just any OS, no. What options you have available to you - I don't know, you'll need to get involved in one of the PS3 forums to get a good idea of what solution best fits your needs - i don't expect you to find many experts on this subject matter here.
