Currently I have a 1680x1050 monitor. Would a $160~ 1080p monitor be worth it? Will the resolution difference be noticeable?

At the same size, it'll be noticeable, if you move up in size, less so.
Looking through the Newegg website they currently have some BIG deals going on: http://www.newegg.com/Product/ProductList.aspx?Submit=ENE&N=100161617%20600012673%20600012217%208000&IsNodeId=1&bop=And&order=PRICE&page=1
The link is up-to-date at time of posting and I've filtered the selections for IPS/VA 1080 panels sorted in price order from low to high.
Me, I'd look for an IPS or even a VA type panel (very wide viewing angles, excellent colours) rather than a 'fast' TN one, in this kind of price territory, you'll be looking at a 60Hz refresh rate so the 'slow' IPS/VA panels won't actually be any slower.
