My son needs a desktop to run Lumion CAD and 3D rendering architecture software with some pretty lofty requirements. No desire or need to overclock anything with this setup. Trying to future proof it as much as possible in this day and age.

So far planning:
Intel Core i7-7700K Processor 8M Cache, 4.50 GHz, Quad-Core Kaby Lake
ASUS PRIME Z270-A LGA1151 DDR4 DP HDMI DVI M.2 USB 3.1 Z270 ATX Motherboard
EVGA GeForce GTX 1080 SC GAMING ACX 3.0, 8GB GDDR5X, LED, DX12 OSD Support

Still need:
DDR4 RAM, 32GB at least 2400 MT/s and 3000 or 3200 better but may be one place I hold back
PSU probably 750W and 80+ and at least Gold...maybe this one:
EVGA Supernova G2 750W 220-G2-0750-XR Fully Modular Power Supply
Planning a 250-500GB SSD and two 1TB HD in RAID 1...probably can get by with 5400RPM drives
Mid-Tower case...son is for function over form...so doesn't need glass or flashing lights
Want to water cool the CPU so maybe:
Corsair Hydro Series H100i v2 Extreme Performance Liquid CPU Cooler

So feel free to criticize the "So far planning" section and any help and recommendations appreciated for the "Still need" section. Thanks in advance.

For that budget, you can definitely get him a great running rig.

I find that getting the fastest possible RAM provides only a negligible boost in performance from more modestly clocked memory. The best advice that I've found is to balance clock speed with CAS latency, which is important, too. Also, don't get an Intel 600p SSD. The MyDigitalSSD BPX and Samsung 960 EVO are both around the same price and offer significantly better performance.

For cooling, all you need is a decent air cooler. Watercooling a chip with a 91W TDP will only be good for form and acoustics. It also won't last as long, require maintenance, and could eventually soak that expensive video card. Also, something like an H100i or A80 will provide particularly poor value at stock clocks.
