At 2GB per card, VRAM will be a significant hindrance in SLI.
How significant would it be? deal killing? considering the 1060 in that general range is only 3gb
The 1060 3GB is more like a 1055 as it has reduced shaders. From monitoring my VRAM usage, I have noticed a lot of games get to 4GB at least at 1080P. Games like CoD, Doom, and GoW4 use up to 6GB at 1080P.

Its true but this will give you better eye candy in the games since pretty textures eat a lot of vram. If you don't care so much about visuals than go with 3gb. Its still better then dual 770s. 6Gb give you better long term optimization for coming game that are much more demanding.
For example, If you play skyrim with mods, and you use 4k+ textures you will hit over 3GB of vram moment you load into the game, soon after the game will crash.
