How do I hook uo 3 monitors that have HDMI input only? Thank you

You don't.

Eyefinity is a multi-display technology from AMD that works with many different video outputs, but has a reliance on one technology in particular - DisplayPort. AMD's Eyefinity technology won't work without it, so if you're building a new machine and don't have the monitors yet - be careful with your purchases.
