I'm currently in the works in upgrading from my old PC, however i'm torn on which CPU I should get. I currently have a GTX 750 Ti paired with an AMD FX-6300, I do 1080p gaming... with turning a lot of settings down with newer games. I'm looking to still do 1080p gaming but eventually change over to 1440p, so my question is the i7-6700K overkill for just 1080p? I'm probably going to pair it with a GTX 1070.

For strictly gaming it may be, but it will be good for 1440p. Also games like bf1 benefit from hyperthreading. It will also help from bottlenecking a future gpu

Completely depends.

As chalky already stated, for cpu intensive games like BF1 it can use more then 4 threads and thus that i7 will make a noticable difference.
Over the next 3-4 years there should be more and more games where an i7 will be fully utilized

For any cpu intensive task besides gaming (like video editing) the i7 is going to make a very noticable improvmenet.
