So this is a bit of a weird question but has anyone seen a build with a custom loop made of just fittings and extensions? As in no tubing at all.

I'm curious to see what it would look like!!

Is this a question about 'should I do this' or 'has anyone done this'?

If the first, no probably not, it's expensive and not really clean looking.

If second, yes, people have done this at great cost with negative impact to flow rates where flex or rigid tubing would be the better choice.

If it would look nice I'd do a build to showcase for E3. Expecting about 5 grand to spend on this. I don't expect to keep it as a long term build.

That would be fun, actually, but isn't that like...2 weeks from now? Wouldn't you need to have everything pretty much already done and wrapped up long before now?

Either way, if I were doing this, I would go the route of using soft copper tubing rather than PVC or rigid PETG tubing. I'd either polish the copper and clear coat it, or I would nickel plate it.
