System Usage from Most to Least Important: Scientific computing (Not trying to build a workstation or anything, but want decent capabilities), 1080p gaming

Overclocking: Maybe, but in the far future

SLI or Crossfire: No

Your Monitor Resolution: 2x 1080p @ 60Hz; highest load would be 1080 ultra on one 1080p video playback on the other

Additional Comments: I'd prefer a plain functional case, to one filled with LEDs

And Most Importantly, Why Are You Upgrading: My current desktop is 5 years old and I'm looking to upgrade

A couple of thoughts:
[1] For M.2 I haven't done non-SATA drives before, is this going to cause any issue as far as booting/bios?
[2] You say X370 > B350 but if I'm not doing crossfire/SLI is this typically true? Like the MoBo you linked in any case, although I'll have to rethink the memory to make sure its officially compatible same with the M.2 drive

m.2 are way faster than the regular sata SSDs. The motherboard supports it. In fact all z270/X370 motherboards. The only complain you'll have with the M.2 is that your windows (OS) boot too fast lol. Here's a comparison.
I chose the X370 because they offer superior VRM and provide better voltage stability and thus are great for overclocking and thermal profile. The processor you chose is made to overclock. So getting a motherboard that supports better overclocking makes sense. For the 20$ difference, I'd say it's worth it.
The memory IS compatible but yes I recommend you do your research. Ultimately it is your rig and we are here just to advise you :)

Good points about the X370 and yeah $20 is worth it in my opinion.

As far as compatibility, I know in theory that both memory and the M.2 drive should be compatible, but noted that these particular models aren't listed on gigabytes official support lists here and here. I feel like I'd risk it on the M.2, but I worry that particularly because this is ryzen build that if the memory isn't on the official support list the speed might be limited. worst case to 2133 or 2400, which can cause a drag in performance.

Links are unfortunately not working.

I have not had issues with the multiple Ryzen build that I have done/seen. Ryzens love using faster rams so 3000/3200 is recommended. But yes I totally understand why you are concerned regarding compatibility. I would want to make sure that the parts are officially supported to avoid any inconvenience. Better be safe than sorry right :p

Agreed about being safe, anyway I'm going to look into explicitly compatible memory/M.2 options tomorrow, and will update my build list then. Thanks again for your input mbilal2.

Updated the main post to reflect the changes suggested by mbilal2, verified that the chioce of memory and M.2 SSD are officially supported for the MoBo.

No HDD? I assume you already have one then?
