Problem when remapping my documents user folder

Fresh install of windows 10 on my SSD.

Begin changing the location of the default My Music, My Videos, etc. to new folders within my Hard Drive to use that as the main storage. I'm doing this by right clicking on the folder and going to the location tab, and selecting the folder from there. During this process I set the location of My Documents to just E:\ (No folder) by accident. Now when I attempt to recorrect this problem by moving it to a different folder within the E drive, and it gives me an error saying I cannot move it to a child folder within the drive, can't remember exactly what it says, I am on mobile currently, will update later.
I also cannot change the location back to a folder within the c:\ drive, getting a different error here, but still no success. The Documents folder within my user folder is also invisible... It is not visible but when I go to recreate a folder named Documents, it says that one already exists...

Any ideas on how to fix this problem?
