I got a rog strix 1080ti, and would like a 3 monitor setup, is this a good choice for 3 cheap, but good screens?

My answer is no. Your graphics card is awesome and you could use something faster. If you are a gamer and you want to get the most out of games, don't only get a 1ms response rate 75hz refresh rate, get a 1ms response rate and 144hz.
On that monitor, you are able to see 75 frames per second. The standard on monitors is 60 frames per second. When you are in a game and you have the fps counter on and you can see it says 250fps if you are on a 60hz monitor, you are only seeing 60fps.
75hz is not a big improvement but 144hz feels a lot smoother and better. I can recommend you one of these monitors however you will need a better budget.

These monitors are 24" 144hz 1ms response rate TN Panel monitors. They do great for gaming, I myself have a 3 monitor setup. One is the ASUS VG248QE monitor (which I use for gaming) and the other ones are very thin 60hz acer monitors for working, emails etc.
You will need an extra £100 or so but it would be a very good choice for gaming.

I could tell you for sure that 144hz looks better than 60hz but since you are on a budget, it is your choice.
If you are not into hardcore gaming or games such as: Rocket League, COD, Battlefield, other shooting games, skill games, fast reaction games then you probably won't need 144hz and those 75hz monitors would do fine.
It's your choice but I do recommend getting a 144hz monitor. If you are considering it and don't like the price for these then you could do a bit of research and take a look at some other monitors. I suggested those as they are 24", fit your match, are faster and they come in a day if you get an amazon prime trial or you own amazon prime. Do some research and select your match.

Kind regards - Justin.
