Not sure what to upgrade too..

I'm conflicted between the i7 7700(non-k) and the much cheaper, i5 7400/7500

I'm mostly wanting the upgrade (from an fx-6300, yes I need to get a new everything.) to get better performance in Arma 3 (online life server, rip). I've had the 7700k before and played online and it ran smoothly enough for comfortable game play. I've heard the pros and cons for the 7400/7500 and can't decide weather I want to risk saving a few bucks and getting the 7400/7500 for Arma 3.

i7 7700 = $479
i5 7400 = $269
i5 7500 = $299
(New Zealand prices)

PS. I know this is probably asked a lot.. But I genuinely can't find a solid answer (or even video on YouTube) for weather the i5 gives decent performance for Arma 3 online..

Pick a CPU with 8 threads or more, It's good to have in a CPU-hogging game like Arma 3.

i5-8600, i7-7700/8700, Ryzen 5 1400 or R5 1600.

I'd choose the R5 1600 with 6 cores and 12 threads personally.

Hmmm. The R5 1600 is tempting as its cheaper, so I'd be saving money (unless the motherboard is more expensive, which if I'm correct I don't think is..). Would it suffice in Arma 3 considering all I've ever seen in forums is Intel > Amd?

Intel used to be better when AMD only had the FX line-up, but they've pretty much taken charge for now when it comes to price/performance. You get a lot for the money compared to Intel's CPU's.
