HELP setup dual or triple monitor setup with 1 existing ultra wide monitor

Hello!! Thanks for taking a look and I appreciate any help.

I currently am running a desktop with Windows 10, a Gigabyte GTX Geforce GTX 1070 8GB G1 Gaming Video Card. The video card supports 1-HDMI, 3-DISPLAYPORT, 1-DVI-D DUAL LINK.

Currently I am using one monitor, a LG-34UM95-P 34.0" 3440x1440 60Hz Monitor.

I am a gamer and streamer. I was hoping to add 1 possibly 2 additional monitors. I guess 1920x1080 would work well. I need one VERTICAL so I can read my chat window and the other monitor normal just to run other apps in, maybe PC game on that one.

I use a television to play console games then that goes into an Elgato capture card so the monitors don't need to be used for that.

My main questions are....
-Will Nvidia/Windows let me use the 3440x1440 on the ultra wide and 1920x1080 on the others
-Can you guys recommend a good/decent monitor for the vertical one and the other monitor.
-What size do you think is good? 21" ok for each?
-Any special hardware you think I'll need?

a 19" 720p monitor would be more than enough for just "reading chat" and no you wont have any problems running those resolutions with the graphics card you mentioned
