I currently have a Acer K272HUL on NVIDIA GeForce GTX 970
Current Resolution 1707x960 pixels
Work Resolution 1707x920 pixels
State Enabled, Primary
Monitor Width 2560
Monitor Height 1440
Monitor BPP 32 bits per pixel
Monitor Frequency 59 Hz

I was thinking of upgrading to a Acer Predator XB271HK bmiprz specs are as follows
32" IPS UHD Widescreen with 3840 x 2160 resolution
Response Time: 4ms
Pixel Pitch: 0.185mm. Flicker-less Technology-Reduces annoying screen flickering that can cause eye strain when viewing the monitor for long periods.
Signal Inputs: 1 x HDMI & 1 x Display Port (v1.2)
Brightness: 350 cd/m²

This monitor would be mainly used for gaming and my video card is a Nvidia Geforce GTX 970 which works with the built in G - Sync technology.

Do you think this would be a good upgrade and/or have any opinions on the Acer Predator line.

For gaming, you'd be better with high refresh monitor - 100Hz or more.
So better look for 1440p@144Hz. If you are sitting under 1m from the monitor, 32" is way too large. optimal gaming monitors are 24-27" for under 1m.

What do you think of this one? Acer Predator XB271HU bmiprz 27" WQHD (2560x1440) NVIDIA G-SYNC IPS Monitor, (Display Port & HDMI Port, 144Hz)
you can get this model with or without IPS, what would everyone recommend?

I would not get a monitor from Acer :) mainly due to questionable build quality and quality control.
Have a look if anything from dell/alienware will fit your budget - simply the best all around from my experience.
The panel type is very long discussion. good IPS panels are great at color accuracy while having edge bleeding.
TN panels are absolutely the fastest - no gosting.
VA are somewhere in between. the Quantum Dot variant is very good from my point of view.

Do you think I will see a big difference while playing Call of Duty, Player unknown's battleground and World of Warcraft on this monitor?

Well, you will see much more detailed image. And more on the screen as games tend to show wider scene on higher resolutions.
The image will be more fluid in games where your card will be able to push well over 60FPS. You will see/feel difference if the FPS is higher than 75, preferably over 100.
But the easiest way is to use the new monitor for few days and then try to return to the old one - that will be much more obvious.

Games you mentioned are not the lightest, so on native 1440p, you will have to lower settings until you upgrade the GPU.
If FPS is really low, set the render/in game resolution to 1080p to ease on the GPU.

I was thinking of upgrading the GPU as well but was told now is a very bad time to buy a video card. Prices are apparently through the roof on the Nvidia 1080.... like in excess of $1000.

i totally agree on "don't do it now". That's why i mentioned ways to make life better while you waiting.
And since at least Nvidia is going to release something new by the mid summer, I'd wait for that. And I'm actually waiting as my 1070 is far from enough to drive games with maxed settings on 3440x1440 at 100+ FPS. You need at least GTX 1080 level of performance to have the same with your monitor.

UPDATE: I purchased the DELL S2716DG 27" Gaming Monitor with WQHD 2560 x 1440 Resolution 144 Hz Refresh Rate and NVIDIA G-Sync 16:9 TN Panel and couldn't be happier. All my games run fast and smooth, no frame rate issues or anything. It's like I got a new monitor and high end video card. Anyway thanks for all the help and advice.
