To start here's my current build:
EVGA Z97 Classified
i7 4790k
16gb Ram
Samsung 850 Evo SSD
850 watt power supply
Radeon R9 280

Games I Play: Overwatch, PUBG, Fortnight, CSGO, DOTA2, WOW, GW2 and I'm also working on building a Sim Rig for Asseto Corsa and iRacing.

I recently celebrated my 25th birthday and my girlfriend really wants to purchase a new monitor for me (she plays games on my computer so she has an ulterior motive for doing so but I can't complain). After browsing our local Microcenter she/we really love the curved ultrawides but the only downside is I know my GFX card is not up to the challenge of a 34" 1440p ultrawide. I really want to upgrade but I'm waiting out this utterly absurd mining craze. It seems like cards are starting to trend down but very slowly.

Getting down to business, her and my rationale is buy the monitor I WANT now (even if I have turn down some items to make things playable or play in 1080p) and in a few months/ later this year get a new graphics card that will allow me to handle the monitor. I'm looking to get into VR for sim racing as well so I intend to buy a 1070ti or better.

These are the monitors I'm looking at:

Or should I just go with a multi monitor setup?:

Will it look bad in 1080p for now?

The LG is an IPS and quality looks great but the acer has 100hz vs the LG 75hz. Will it make that much a difference?

Any suggestions of the future GFX card in terms of running this monitor and later a VIVE?

I've also considered ebaying an additional 280 for around $80 to crossfire just to tide me over.

Either is a good choice, personally I prefer IPS for better colors but some don't like IPS glow when the screen is darker. And yes just turn down the settings and those games should be ok until you can get a better card. Considering that they support Freesync I'd look for a higher end AMD GPU when you decide to buy.

There's also this 2560x1080P/144hz/IPS monitor which is really nice however it doesn't appear Microcenter carries it.

Also just as a side note I know that Overwatch doesn't support 21:9 for "fairness" but I think your other games support it.
