The options in task scheduler are completely greyed out for me and I'm running it as admin. Anyway to get permissions or fix this?

After looking for an answer and getting none or being told to just "let it do it's job" several times I found that if I highlighted the scheduled area and clicked disable it wouldn't scan anymore. Seriously if it was scanning outside of the designated hours when I'm working on my computer then it's not doing it's job. Since then the service executable has not caused any spikes and I am able to work and/or play in peace. It should be noted that after any update you will have to disable the scans again with this method but it still works at this time.
