I've just ordered the following components:
- Asus ROG Strix z390-F Motherboard
- Intel Core i7-9700K processor
- Corsair Vengeance RGB PRO DDR4 3000Mhz (2x8)
- Samsung 970 EVO M.2 500 GB
- Samsung 860 EVO 2 x 250 GB

Waiting to buy GPU, case and possibly a new processor cooler depending on the case I'm getting.

I have in my old build a TX650M PSU, which has been in use for 5 years. I kinda want to get a brand new one for the new build, but would this PSU do the trick for my new build? Looking to get a RTX 2080 or a 2070 as my GPU.

Also, I have a Phanteks PH-TC14PE unopened and in the box, but it's so big, so I'm not sure if it means having to buy a bigger case than I was planning on.

Any help/suggestions would be helpful!

Yeah that PSU will work fine. Your build uses about 500w at the very most including the RTX.

CPU coolers are pretty standard. Should fit just fine.
