Anyways, i'm going to build a new gaming pc for around £1400 (i live in Europe)

I'd recommend an i5-3570k, it doesn't cost as much as the i7-3770k and will perform just as well for gaming. And does very well when overclocked

As far as graphics cards go, on that budget running two would be perfectly feasible. Crossfire HD7970s or SLI GTX670s (probably the latter) is what I'd do.

750W PSU is an overkill, that rig is going to consume 200-250W under stress so it isn't wise to have a PSU that powerful unless the OP is planning to do 3-way SLI. A quality PSU of 400-500W is more than enough, if you are planning to SLI in the future you might just grab a 550W psu or even 650W if you don't want to stress the PSU too much. Also, a powerful air cooler like Silver Arrow (Extreme) outperforms the H100 and with less noise and cheaper price. AsRock Z77 Extreme4 is the best bang-for-buck motherboard ATM, so I'd suggest you to take a look at it unless you're absolutely sure you'll need the features the P8Z77-V Pro has to offer, such as 12 CPU + 4 iGPU power phase. For decent overclocking, say 4.5~4.8Ghz the 8+4 design in Extreme4 is more than enough. And one more thing, the Seagate Barracuda HDDs are known for their tendency to break up pretty soon, so I'd suggest you to buy Samsung SpinPoint F3 or WD Caviar Blue/Black instead.
