The socket 1155 is knowing just dual channel , you don't need 2x4GB RAM,buy 2x4 or 4x4gb RAM. For 6870 Crossfire 750W is enough. For OS other aplications you can buy a 60 GB SSD.
Theese are some ideas how to lower the price.

Currently the i5 2500K is performing better in most applications simply because most applications cant utilize 8 threads, its about $100 cheaper and you wont even notice a difference especially when it comes to gaming

gpu: since this is your new build... and since hd 7970 is going to market on january 9th... i'll suggest you take the latest single gpu card... even hd 7970 will cost you more money... this will be a better solution as multi-gpu solution rely heavily on driver update compared to single gpu.... to know more about hd 7970 you can go here..
http://www.techpowerup.com/reviews/AMD/HD_7970/

and this card eventually costs you $550... plenty isn't it? but i'll still pick this one over hd 6870 crossfire....
