So I'm looking at this monitor: here and the max res is 1680 x 1050. Is that 1080p or do you need more pixels for that?

The vertical resolution of the monitor is 1050, so it's a little bit short. "1080p" is a term which applies to TV, not computer monitors. In the TV case it means "1080 lines of resolution, progressive". "Progressive" means every line is displayed on each scanning pass. The alternative is "1080i", or "1080 lines of resolution, interlaced". "Interlaced" means every other line is displayed on each pass, counting on your brain and eye to perceive it as though it were every line displayed on each pass.

If you want to display the "full 1080 lines of resolution you'll have to get a monitor which is "UXGA"... 1920x1200 or 1600x1200.
