is there a hdd or ssd storage GB limit in a laptop?
I have a gateway NV78 and I want to upgrade my HDD to a 512GB SSD.

are there any limits to the amount of GB storage I can use on a laptop?

No, there are no limitations (except for size lol) in upgrading to a SSD/HDD.. What happens is the newer SSD/HDD will require more power than the older ones..

Not that needs to be explained in any capacity, because those limitations won't apply to you. So to answer your question, that SSD will work flawlessly in that laptop. Short simple answer.
