Hi. Im planning on building a new gaming rig primarily for ultrawide gaming. Right now Im stuck in choosing between :

Choice A :
GTX 1080 ti, 2560x1080 Display, i7-8700K

Choice B :
GTX 1080, 3440x1440 Display, i5-8600K

Help me please. Im stuck with these choices because my budget only allow for 1 of them.
Should I get a beastly PC and 1080p ultrawide or go for 1440p ultrawide with i5 & 1080?

Solution
A will give you better performance for much much longer at the cost of that lower resolution.

Don't get me wrong option B is still a very very good pairing, 3 years down the line though that 1080 May struggle at that res with new titles from that era.

A 2560 x 1080 I see that 1080ti lasting 5 years minimum & the 8700k lasting virtually forever.

Option A would be my stab. You forgot to include the rest of your specs. Pairing a K suffix processor with a B series chipset is moot and getting any ram higher than DDR4-2666MHz would be likewise. In order to avail the K on your processor and get the best out of the system, get DDR4-3200MHz dual channel ram kit, a Z370 chipset board.

What of your PSU, chassis, and the storage drive(s)?

Forgot to mention it, My pecs are :
G.Skill TridentZ RGB 16gb 3000Mhz
Asus Z370-F MoBo
Nzxt H500i Case
Corsair RM650X Psu
Deepcool Captain 240 ex RGB Cooler
Samsung 970 Evo M.2 SSD
2TB Toshiba HDD

I was going for option A initially but then I heard that it is better to go for better display because it'll last longer than any other parts and that newer upcoming gpu could benefit from better resolution. Your thoughts?

if you can wait there better parts dropping soon. one is the newer nvidia gpu. the other is the newer intel chipset mb are dropping soon. asus has one of there rog mb info leak about the new x390 chipset. if the new chipset is dropping then intel may be dropping some more updated cpu. i would use a standard monitor for now then pick up a nice curved gaming monitor on black friday. vendor like samsung are starting to drop large curving gaming units. toms hardware just reviewed a 42 inch monster.

Thanks for the insight! I was leaning towards option A too since a 3440x1440 display is quite pricey right now. Might be upgrading the display whne price drops.

My only concern is the new Nvidia gpus rumoured releasing around the end of this year. But still, even if it does, the availability would be scarce.

The cpu and motherboard wont be much a drawback since the performance bump would not be significant judging from past cpus.
