So i'm currently using the intel pentium g4560 and want to upgrade. Yes, i know that i'll also have to change the motherboard too. I managed to find a cheap b360 board so i don't mind. My question is since i'm on a super tight budget right now, should i just buy the i3 8100 and upgrade to i5 8400 in the future? Or should i just save up and keep the g4560 until i have enough money for the i5 8400?

If he is super tight on Budget the 8350k is a total waste of money! And he also needs a different Motherboard (Z370) to be able to overclock. These Boards arent cheap!
The 8400 is pretty good with its 4 Ghz boost clock and 3,7Ghz on all Cores.

I would rather safe up for the 8400 since is does have higher coreclocks (3,6Ghz on the 8100 compared to 4Ghz on the 8400) and gives you 2 more Cores which will help you in the future or with other...

depends if you need the 6 cores or not. just for gaming 4 cores will be fine but the i5 8400 has a low clock speed and will likely impede you ability to game at high fps. if you have the extra money then it might be worth looking at the i3 8350k if you like the idea of overclocking.
