I am planning to buy a 1080, 8700k, h7, z370 strix e, and a +80 Gold 850W PSU. I am going with an NZXT H500i. I am planning to get 2 more fans 1 140mm rgb and 1 120mm will that be enough?
The intake in the case requires more power to generate positive airflow inwards, as the ambient is not constrained outside the case and the intake amount has to be accumulated from a larger area. So the rear 120 will suffice to filter the hot air from within, but the front should be always lined with more powerful fans for intake.
I think I will buy 2 rgb 120mm replace them with top and rear, put the included fans on front. would that work?

Yes putting larger fans will have more CFM which moves more airflow but 120mm will generally perform well enough. If you really want to spend a lot then install 2 x 140mm intake fans on the front and replace the 2 x 120mm stock...
This case has 2 x 120mm fans included. I assume you will be replacing the top with the 140mm rgb then. Seems like you can put 140mm x2 in the front if you want to as well.

can I make the rear fan 140mm rgb, place the 120 milimeters on front and the other 120 somewhere else like above the rear fan?
The top fan can be a 140 or 120 but the rear has to be a 120. I would just buy the 2 140s and place them on the front. You would then have a positive airflow design which will keep dust inside the case to a minimum. Going with 2 120s on the from and a 120 and a 140 on the back will cause a negative airflow design that will increase dust inside the case and could cause hot air that is exhausted from the case to be sucked back into the case right away.
