PCI-E power connector options

EVGA 1070 Ti Ultra Silent (2 x 8-pin power connectors)

Seasonic Focus Plus Gold 750W

The card came with two 8-pin to 2 x 6-pin cables (see similar pic - https://ibb.co/fF506L ), which threw me. I started wondering if my research was crap, as I was expecting 8-pin connectors to the PSU.

It's a moot point, as the PSU comes with two PCI-E cables, and each has 8-pin to 2 x 6+2-pin connectors (one looks more of a slave - similar pic here - https://ibb.co/d7qgff ). Presumably the two cables are for potential SLI setups.

Would I be better using both cables (two PCI-E plugs on the PSU) to the two 8-pin plugs, and ignore the slave connectors, or is there no discernible difference, power-wise if I use a single cable to power both 8-pins?

No difference, they are designed like that to support supply of enough power for Graphics cards in the PCI-E slots. My last 750W PSU i used 1 cable for the 8pin and 6 pin connector on my 2080 and my new PSU i am using 2 separate cables. Both methods work fine.

High power graphics cards (above 225 Watts) are usually outfitted with two (or three) PCIe slots. For performance and safety reasons, Sea Sonic highly recommends the use of two (or three) separate PCIe cables to connect such cards to the power supply.
