My mobo supports pcie mode and m.2 slot. But afaik this evo 860 is sata. So will it even work on pcie mode? my mobo : MSI Z97 Gaming 3

No, it wont.
You can only connect it with its native support.
PCI-E, M.2 and SATA are three different connection methods(protocols). They are totally different.
PCI-E>M.2>SATA-III speed.
If you want, you can buy a 960evo which also comes in M.2 version.

MSI Z97 Gaming 3 supports both - sata and nvme M.2 drives.
So - no problem, you can use 860 evo M.2 as well.

With all these answers I will buy the 860 m.2 ... but one last question : In the bios settings should I put it on pcie mode or sata mode? 860 m.2 is not a nvme ssd. So It shouldn't work on pcie mode right? I am kinda confused.

Yes - if you have such setting in BIOS to set M.2 slot mode manually, then only sata mode will work with 860 evo M.2 drive.
